Shepherd’s Pie

Shepherd’s Pie is the ultimate comfort food—savory meat and vegetables topped with creamy mashed potatoes and baked until golden. This budget-friendly dish is hearty, filling, and perfect for family dinners.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 16 oz bag mixed vegetables
  • 1 tablespoon worcestershire sauce
  • 1 cup beef broth
  • 6-8 potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1/2 cup milk
  • Salt and black pepper, to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the potatoes: Boil potatoes in salted water until tender, about 15 minutes. Drain, then mash with butter, milk, salt, and pepper until creamy. Set aside.
  2. Cook the filling: Heat olive oil in a large skillet. Add onion, carrots, and garlic, cooking until softened. Add ground beef and cook until browned. Stir in Worcestershire sauce and beef broth. Simmer until slightly thickened. Stir in peas. Season with salt and pepper.
  3. Assemble: Spread the meat mixture evenly into a baking dish. Spoon mashed potatoes on top, smoothing with a spatula. Use a fork to create ridges on the surface.
  4. Bake: Preheat oven to 400°F (200°C). Bake for 20–25 minutes, or until the potatoes are golden and the filling is bubbly.
  5. Serve: Let cool slightly, then garnish with parsley and serve warm.

Tips for Shepherd’s Pie Budget & Flavor

  • Substitute ground turkey or chicken for a leaner, cheaper option.
  • Use leftover mashed potatoes to save time and money.
  • Add extra veggies like corn, celery, or mushrooms to stretch the filling.
  • For a cheesy twist, sprinkle shredded cheddar on top before baking.
  • Shepherd’s Pie is great for reheating!
